1 cup + 2 tablespoons (9 ounces) Greek style nonfat yogurt

1 ounce (2 tablespoons) blue cheese

salt, optional, to taste

granulated garlic, optional, to taste

Buffalo Chicken Sausage Skins

Here is a way to add fried chicken-skin-like texture to Doc’s Amazing Buffalo Chicken Sausages, with significantly fewer calories, no guilt, and no deep fat frying. We call these creations Buffalo Chicken Sausage Skins.

Thai and Vietnamese Spring Roll wrappers, available in Asian supermarkets and online, are wetted and wrapped around Buffalo Chicken Sausages, which are then baked until crispy.


Preheat your oven to 375 degrees.  Convection works well but is not necessary.

Wet a spring roll wrapper thoroughly in cool water, and place on a flat surface.  

Place a cold Buffalo Chicken Sausage on the spring roll, and wrap it up, tucking in the edges. 

Spray the spring roll with nonstick cooking spray, and place on a wire rack in the oven.  

Cook until crispy and starting to brown, about 10-12 minutes.

Serve with or without skewers. Eat it with your fingers like a chicken wing, accompanied by celery and carrots sticks and Lite Blue Cheese Dip, of course.

Instructions for Blue Cheese Dip

Blend the blue cheese into the yogurt using a food processor or an immersion blender. Season as desired with salt and granulated garlic.

Serve Doc’s Amazing Buffalo Chicken Sausage as an appetizer with this Lite Blue Cheese Dip and celery and carrot sticks. For example, serve the dip with hot Buffalo Chicken sausage on skewers or cut into pieces and served with toothpicks.
