Ingredients for 4 servings

4 medium-sized corn tostadas

4 fire-roasted Hatch or Anaheim green chiles, peeled and seeded (fresh preferred)

4 slices tomato, optional

Deconstructed salsa, optional

4 Doc’s Amazing Low-Fat Beef Patties, reheated

¾ ounce crumbled Mexican style cheese (e.g., queso anejo, queso fresca, or queso cotija), optional

1 slice low-fat cheese, optional


For deconstructed salsa, combine:

½ cup diced bell peppers

¼  cup diced poblano chiles

¼ cup diced Serrano chiles

¼ cup chopped onion

Instructions

Green chiles can vary greatly in how hot they are. Anaheims are usually mild. The tasty Hatch variety from New Mexico can be quite hot! Canned green chiles are predictably very mild, but not as nice as chiles that you roast and peel yourself.

Heat tostadas in microwave until hot, about 1-2 minutes.

Layer on the green chiles.

Top the green chiles with the reheated beef patties.

Now you have three options as shown in these pictures.

  

1. You can top the beef pattie with deconstructed salsa and dust with crumbled Mexican style cheese or

2. You can top with a slice of tomato, and dust with crumbled Mexican cheese. or

3. You can top the beef patty with green chiles while reheating in a skillet, top with a slice of reduced fat cheese, and cover the skillet until the cheese has begun to melt.
