Potato Crepe Burgers

Potatoes and burgers are a heavenly match! Here is another way to make a low-calorie, low-fat, potato-based wrapper to serve your Doc’s Amazing Beef Patties. This is another recipe that requires some cooking experience, so don’t hesitate to bring in a friend to help!

This recipe is like making pancakes. Mix all ingredients very well with a wire whisk. Preheat a large nonstick skillet to medium low. Spray with nonstick cooking spray. Add one half the potato/egg white/flour mixture, and cook like a pancake until the crepe has set and is just beginning to brown. Flip and cook the other side. Remove and let cool. Then cook the remaining half of the batter.

Cut each large crepe into 4 equal sections. This will give you 8 pieces to use as "rolls" for 4 hamburgers.
