4 medium corn tortillas (17g and 80 calories each)

3/4 cup (6 ounces) nonfat refried beans, heated in the microwave

¾ cup Queso Fresca Dip, optional

1/4 cup (2 ounces) queso anejo, queso fresca, or other grated cheese for sprinkling

3 hot Chorizo sausages
(12 ounces)

1 cup shredded lettuce

1/2 cup red bell pepper, diced

½ cup poblano chile, diced

Ingredients for Queso Fresca Dip

1 cup (8 ounces) fat free Greek style yogurt

3 tablespoons crumbled queso fresca

½ teaspoon salt (optional)

1 teaspoon of Pico de Gallo or other chile based seasoning (optional)

Chorizo Tostadas

These delicious tostadas are assembled like the Chorizo Loaded Nachos.


Place a thin layer of warm refried beans (2 tablespoons) on each tortilla. 

If desired, next apply a layer of Queso Fresca Dip (2 tablespoons).

Next place ¼ cup shredded lettuce on top of the beans and queso fresca.

Top with hot slices of Chorizo, diced red bell peppers, diced poblano peppers, and a little crumbled queso anejo.  Serve immediately.

Recipe for Queso Fresca Dip 
(makes a little more than 1 cup)

This thick, creamy dip is made with nonfat yogurt and queso fresca. You won’t believe it is made with yogurt when you taste it!


Blend all ingredients using a food processor or an immersion blender so that the cheese is thoroughly mixed with the yogurt.
