5 oz (142 g) fresh mozzarella cheese, diced

5 oz (142 g) cherry tomatoes, sliced

1/2 oz (14 g) fresh basil, sliced or chopped

1 tablespoon (15 g) olive oil (or amount recommended on couscous pkg instructions)

3 to 6 cloves fresh garlic, minced

½ teaspoon (1.5 g) salt (or amount recommended on couscous pkg instructions)

6 or 7 threads saffron (optional)

Preparation & cooking time: 20 minutes

Tools 2 Medium nonstick skillets (or 1 skillet and 1 pot) with covers
Serving bowl
1. In uncovered skillet or pot, cook garlic in olive oil with low heat until garlic is fragrant.
2. Add two cups water, salt and saffron (if using) to pan with garlic, and bring to boil over medium heat.
3. Add instant couscous, stir briefly, remove from heat, cover, and let sit for 5-10 minutes while cooking sausage.
4. Cook Doc’s Amazing Chicken Italian Sausages as follows:
- Preheat non-stick skillet to medium-low
- Brown sausages for 1-2 minutes per side
- Add 3 tablespoons water, and cover
- Cook for approximately 2-3 min. per side
Slice sausage into bite size pieces
5. In serving bowl, fluff couscous with a fork. Add sausage, cheese, tomatoes & basil and toss to mix.

Serve hot.
