2 red bell peppers, sliced lengthwise in half, stems and seeds removed

1 green bell pepper, stemmed, seeded, and cut into fine dice

1 onion, peeled and sliced into rings

4 ounces fresh mozzarella cheese, sliced

Doc’s Amazing Italian Chicken Sausage can be used in all the ways you would use full fat pork Italian sausage, including in subs, pizzas, with pasta, etc.

In addition, we invite you to try our sausages in low-fat, low-calorie, low-carb recipes that let the flavors and juiciness of the sausage take center stage.

Here is an example where we show you how to use our Italian Chicken Sausage as the star in a show featuring a cast of roasted bell peppers, onions, and melted fresh mozzarella cheese.


Preheat an oven to 375 degrees.

Spray a baking dish large enough to hold 4 red pepper halves with nonstick cooking spray.

Place the red pepper halves in the dish, and bake until the peppers have softened, about 20 minutes.

While the red peppers are roasting, heat a nonstick skillet over medium heat, spray with nonstick cooking spray, and sauté the diced green peppers and the sliced onions until softened and very lightly colored.

Carefully remove the baking dish from the oven, fill each bell pepper half with one quarter of the sliced fresh mozzarella cheese and one sausage, and top with the sautéed onions and diced green peppers.

Return the dish to the oven and bake until the internal temperature of the sausages is 160 degrees and the cheese has melted.

Serve hot.
