Ingredients

10 egg whites for the wrappers

1 cup egg substitute, scrambled

1 cup nonfat refried beans, heated in the microwave, optional

4 Anaheim chiles, roasted, peeled, and seeded, or 1, 12-ounce can of fire-roasted green chiles, drained and warmed in the microwave

4 hot El Chipotle sausages

The pictures here illustrate how you can make a wrapper of skillet cooked egg whites, and layer it with things like scrambled egg substitute, roasted green chiles, fat free refried beans and El Chipotle to make breakfast burritos like you’ve never seen before!

Instructions

These pictures illustrate the steps in making a Doc’s Amazing Breakfast Wraps.

Make an egg white wrapper by cooking 5 egg whites in a large nonstick skillet sprayed with cooking spray.

Remove the cooked egg whites, set on a serving plate to cool, and cut into two halves, creating two protein style wrappers.

Repeat these steps with 4 more egg whites to create two additional wrappers.

Make egg white wrappers as described above. Spread ¼ cup warm nonfat refried beans on each serving size egg white wrapper.

Place ¼ of the warm roasted green chiles on top.

Add a hot El Chipotle sausage to each wrapper, roll, and serve.
