12 Round tortilla chips

¼ cup Nonfat refried beans, heated in the microwave until warm, about 30 seconds

¼ cup red bell peppers,

¼ cup yellow bell peppers, and

¼ cup fresh poblano peppers, diced (you may use use whichever of these peppers you prefer)

2 hot El Chipotle sausages, cut diagonally into 6 slices each

¼ cup Queso Fresca Dip

2 tablespoons Queso Anejo or other grated cheese for sprinkling

Ingredients for Queso Fresca Dip

1 cup (8 ounces) fat free Greek style yogurt

3 tablespoons crumbled queso fresca

½ teaspoon salt (optional)

1 teaspoon of Pico de Gallo or other chile based seasoning (optional)

El Chipotle Loaded Nachos

Here is a scrumptious way to utilize El Chipotle in Loaded Nachos, using round tortilla chips and a minimal amount of cheese.


Place 1 teaspoon of nonfat refried beans on each round tortilla chip.

Next, place a teaspoon of the Queso Fresca Dip on top of the bean layer.  

Then gently press slices of El Chipotle onto the dip layer. 

Next, decorate each nacho with a few pieces of the diced peppers of your choice. 

Finally, sprinkle a small amount of crumbled queso anejo on each loaded nacho,
and serve!

Recipe for Queso Fresca Dip 
(makes a little more than 1 cup)

This thick, creamy dip is made with nonfat yogurt and queso fresca. You won’t believe it is made with yogurt when you taste it!


Blend all ingredients using a food processor or an immersion blender so that the cheese is thoroughly mixed with the yogurt.
