What Exactly Is Low Fat?
All of Doc’s Amazing sausages are labeled "Low Fat". What does this mean?

The U.S. Department of Agriculture has strict rules about the use of the term "low fat" for meat products. The Code of Federal Regulations says that ground meat products may only be labeled "Low Fat" when they contain less than 3 grams of fat per the "reference amount customarily consumed" (their exact words).

For sausages, according to the USDA, this reference amount is 2 ounces, or 56.7 grams. All of our sausages contain less than 3 grams of fat per 2 ounces—and thus they all proudly display "Low Fat" on their Doc’s Amazing labels.

For ground beef patties, this amount is 3 ounces or 85 grams. Our beef patties contain only about 2 grams of fat per 3 ounces, and proudly display "Low Fat" on the Doc’s Amazing label.

"Low Fat" Means Fewer Calories, not Less Taste
Fat traditionally accounts for a significant percentage of the weight of sausages and patties (20-30% of the weight of sausages, for example) because it is generally thought to be necessary for juiciness, flavor, and rich taste. From the ground meat maker’s point of view, fat is also a much cheaper ingredient than lean meat.

To understand the connection between fat content and calories, consider sausages. (The same points generally hold true for ground beef patties, though the numbers are typically lower in value than for sausages.)

All of Doc’s Amazing sausages contain less than 5% fat. What benefit does that bring? Well, one clear and important benefit is that reduced fat means significantly fewer calories. Here is why.

Typically, sausages contain 13-15% protein, and that protein provides 4 calories per gram. The percentage of fat in sausages varies more widely, depending on the sausage maker, but it provides more than twice as much energy, 9 calories per gram. Thus, the less fat that there is in a sausage, the fewer calories that there are.

Say you have two sausages, each weighing 85 grams or three ounces. Sausage A is 29% fat and 13% protein. This sausage provides 222 calories from fat, 44 calories from protein, and no calories from water, for a total of 266 calories. Sausage B, from Doc’s Amazing, is 2% fat and 13% protein. It provides the same 44 calories from protein but only 15 calories from fat, for a total of 69 calories.

Health Benefits of Low Fat
Despite the "Doc’s" in our name, we believe that making judgments about what constitutes a healthy diet is a matter for discussion between you and your health professionals. Much has been studied, written about, and debated as to the factors that lead to coronary heart disease and other vascular disease, and to the relationship of diet to heart health. It does seem to us that replacing foods high in animal fats and calories with foods much lower in fat and calories is simply common sense.
